Rainforest Hideaway
“Exotic Caribbean tastes and flavors are paired with classical French techniques and recipes at this romantic and upscale hideaway on the north shore of pretty Marigot Bay. It’s definitely worth the 20-minute-or-so drive from Castries. A little ferry whisks you to the alfresco restaurant, perched on a dock, where you’re greeted with complimentary champagne. Fresh local fish—including the ubiquitous (and foreign) lionfish that is the scourge of local waters but tastes delicious—and prime meats are enhanced by fresh herbs grown in the backyard garden, which is also the source of exotic local vegetables and fruits featured in varioius dishes. Entrées such as panfried mahimahi with creole buerre blanc; marinated loin of lamb with cucumber relish; and grilled beef tenderloin with papaya confit are impressive. “The terrace restaurant at Ladera resort has breathtaking, close-up views of the Pitons and the sea between them, especially beautiful at sunset. The ambience is casual by day and magical at night. Appetizers may include silky sweet-potato-and-coconut soup or Caribbean lamb salad. Typical entrées are “fisherman’s catch” with a choice of flavored butters or sauces, shrimp Dasheene (panfried with local herbs), grilled rack of lamb with coconut risotto and curry sauce, or pan-seared fillet of beef marinated in a lime-and-pepper seasoning. “Chef-owner Jacky Rioux (aka Froggie Jacques) creates magical dishes in his waterfront restaurant overlooking Rodney Bay. The cooking is decidedly French, as is Rioux, but fresh produce and local spices create a memorable fusion cuisine. You might start with a bowl of Mediterranean fish soup, a grilled portobello mushroom, or tomato-and-basil tart. Main dishes include fresh-caught fish grilled with lime and olive oil, grilled rack of lamb, and breast of chicken stuffed with mushrooms and prosciutto in a Bordeaux wine reduction.
